Summer evenings memories

We always loved to have the grandkids for the summer.  Today I ran across this  picture of Jason, Jeremy and Russell making ice cream.  The old fashion way.The rest of the kids run through the sprinkler, play games, argue...
As the sun goes down we would eat our ice cream.  Then the moon would come out, we would bring out blankets.  Lay down on the grass,  look up at the stars...Tell stories,  argue, sing songs, until the mosquitoes  would start flying around.  Time to go in and go to bed.

Taste of summer


The market has been having some beautiful corn this year.  While I was filling my bag with some of the nice ears. A lady standing next to me was tellling me her method for cooking her corn, so I decided to try it.  Now this would not be for a big family.  But I live alone, so for me it perfect for me.  I prepare, maybe 6 ears.  Place them in a square of plastic wrap.  Wrap, twist the ends.



 Then I put them in the refrigerator until ready to use.  To cook, place in micro 3 minutes.


 

   If you have more than  you need, put remainder in freezer.

High Valley Mornings

The fog comes on little cat feet
It sits looking over mountain and valley
On silent haunches.
And then moves on.


It's still summer..but the morning mist rolls down
over the mountains.  We wait for the sun to peek
above them to brush away the mist as the sun warms the earth.  The sky comes out from behind the clouds to reveal a beautiful blue sky.  God's world is so very beautiful...Thank you God.

Summertime

     The great grandkids from Denver are enjoying a day at the Hot Springs...Summer goes all to fast.

Here is the dare devil.....He lucked out,  no broken arms from trying out for football.  That's our Cy.

Kristin and Micah

This is my granddaughter Kristin and her son Micah. Kristin holds down a 5 day a week job at the University here as purchasing agent.  Yet she finds time to be a terrific mom, she is a master cook. We depend on her for our birthday and special day cakes.  

 

She also finds time to do quilting, crocheting, knitting...And squeezes in time to come see Grandma.

                                        Russian Teacakes
  1/2 c sifted powdered sugar                  2 1/4 c sifted flour
  1 c  soft butter                                      1/4 tsp salt
  1 tsp vanilla                                          3/4 finely chopped pecans

Mix together powdered sugar, soft better and vanilla.  Sift together and stir in flour and salt.  Mix in nuts.  Chill dough.  Roll into 1" balls.  Place on ungreased cookie sheet.  BAke at 400 degrees for 10 to 12 minutes until set but not brown.  While still warm, roll in sifted powdered sugar.  Cool.  Roll in sugar again.  Yield:  about 4dozen. cookies.  

These are good and easy...try them...you'll like them.

I Need all the help I can get

This is Karie.  She has been my guide, my teacher since I first got my computer.  Karie is blessed with a lot of patience. Besides all the things she is involved with.   She does have a job.  She is Administrative Assistant at the University here.  She finds time at her lunch hour to meet her brothers at the hot pool for an hour of swimming and her chance to soak up some sunshine.  They are all getting very brown.  But with Labor Day just a week or so away
they will have to switch their swimming to evenings and weekend out at Hooper. 

The pool there is so hot and clear.  It is open year around.  Nothing is so restful as swimming in the pool in the winter with the snow falling. You can look off in the distance and see the mountains covered with snow.
 Never the less...I for one prefer summer. And it goes by so fast.

Making homemade tortillas

Yesterday, I tried my hand at making tortillas.  The ones I get at the market are so dry and the date expires before I get around to using them..I found this recipe on the internet..  It is so easy   I will never buy another tortilla.  Besides, you have everything on hand...No trip to the store to by Masa Harina...Don't worry if you don't have a tortilla press...I don't think I'd use one if I had one.              
 
      Tortillas
  • 2 cups flour            
  • 3/4 warm water    
  • 1 tsp. salt    
  •  2 tsp vegetable oil
  • (optional)  11/2 tsp baking powder
  This will make 8 tortillas
    
Combine the flour, salt and vegetable oil   (if you want the puffy style shell add the baking powder now.) Mix well with fork.  I leave it out. Now slowly add the warm/hot water, and mix.  The warm water makes the difference. It is one of the main differences in this recipe.  Now mix with a fork, until it comes together. Once it's a ball, knead with your hands for a minute or two. If it's too sticky, add only a dusting of flower.  Cover it and let it rest for 20 minutes.  Don't be impatience.  Now, take it out of the bowl and cut it in 8 pieces.   Set them aside.  Cover again, let them rest again about 10 minutes.  Use a minimum amount of flour, dust it on your counter.  Now roll each ball out.  Make them as thin as you like...or however you want them. Place them on a plate separating each tortilla with wax paper or paper towel.  Now on large skillet...lightly oil, then bake each tortilla on both sides.  Keep  then covered.  Use  them for burritos, wraps whatever you want.

Weekend


        The weekend is over, and it was such a nice one.  Two of my nephews stopped by for a couple of hours.  These two brothers take time each summer to hike the high country of Colorado.  One is from Dallas, one from Austin.  And it must have been good to get away from the heat.  We had such a good visit, me doing most of the talking. 
      
        Kristin came out in the afternoon to share the day with her dad..He had a meeting in Colorado Springs.  So we had birthday cake and ice cream without him.  She plans on making him another cake (she loves to have any excuse to bake).

      So.................Happy Birthday, Allan.  Am I allowed to say "You are now officially a "Senior Citizen".......62 years, young.
